Chicken Gumbo for 20

10# Chicken "parts" thighs and legs - The Guys around my crew seem to like thighs and legs best?
2- Rings of good smoked sausage, Kielbasa or a chunky Ham Sausage works great avoid the stuff that looks more like a big hot dog....yuk. Cut into pieces about bite size 1/2" or so.
2-3 Onions Chopped in about 1/2 to 1" pieces
3- stalks of celery
A few cloves of Garlic, quartered is fine or a couple of teaspoons of crushed
Red or Yellow pepper or both chunk it about 1"
2 large cans (32oz) of sodium reduced or salt free chicken broth
Tony's Famous Creole seasoning to taste
Tony's brown gravy mix
Lot's of garlic bread, buns, corn bread or steamed rice
Brown the chicken in a large stock pot with just enough oil to stop it from sticking. When it's nicely browned remove the skin and excess fat, back in the pot. Add the Onyons, Garleek, Sellree and chicken stock, if you gonna cook like a Ca-shun you need to be talkin' like one.....my husband spent too much time down south.
Get the pot simmering gently, add the Tony's (Start with about 2 teaspoons, you can add more later to taste) and let it cook for an hour or so, stirring very gently as to not turn the chicken into mush, we want the chicken to be very chunky. When the chicken starts to pull back from the bone and fall apart add your sausage and simmer another 20-30 minutes or so. Gently stirring only enough to keep it from sticking, don't boil it, simmer slowly.
You can add water to make more juice anytime, don't water it down too much or you'll have soup.
Just before serving skim any excess fat off the top and start sprinkling the Tony's Gravy (Roux) Mix into it stirring gently until you get a nice dark gravy, add the chopped sweet peppers and serve as soon as they get soft, about 10-15 minutes.
Taste and add Creole Seasoning and/or Tabasco to taste
Make bread bowls and fill with Gumbo, pour over steamed rice, serve in a bowl with garlic bread anyway you serve they'll love it.........one pot, for someone else to wash!
Extras: Add some peeled Shrimp, Jalapeno Peppers or Okra, more of anything to taste, Gumbo is how you like it so have fun.
Soup: Add more water
Stew: Leave out the Sausage
Essentials: Disposable bowls and spoons, Cold Beer, Napkins and Zydeco or Credence Clearwater Revival Music.

Cook time: Allow 2 to 2.5 hours
